Sweet potato wrap mit avo
and a fresh mint yogurt sauce
Last week I did this recipe, and somehow I had some leftover sweet potatoes which brought me to todays sweet potato wrap.
I also used the leftover mint and leftover avocado from last week, so this recipe is a great leftover meal from last week’s ones. :D
The raps are a great meal for inbetween and for also for a single person. You can do one wrap at a time and decide how many wraps you wanna do with the ingredients.
That’s what you’ll need:
- 1 sweet potato (1/4 is enough for one person)
- 1 wrap/tortilla of choice
- 1 avocado
- a hand full of mint leaves
- 4 tbsp yogurt (I used lupins yogurt, but feel free to use any natural flavored “yogurt” of your choice)
- 1 lime
- arugula or any oder salad
- 1 spring onion
- salt / pepper / cumin
- optional: fresh cilantro
And that’s how it’s done:
Peel the sweet potato and cut it into small slices.
Season it with soy sauce and spices of your choice. I used cumin and pepper (super great combination for this wrap!).
Afterwards put the sweet potato slices on a baking sheet ant leave it in the oven till they get slightly brown.
For the sauce mix some yogurt with freshly minced mint leaves, season it with salt and lime juice.
Cut the avocado in half and cut it into small pieces.
Wash and cut the spring onions and if needed wash the arugula as well.
Right when the sweet potatoes are ready, put the wraps in just for a second to heat them. (CAUTION: not too long, because otherwise they’ll get super crispy and un-rollable).
And then just serve however you like! Wrap + arugula + sauce + sweet potatoes + avo + onions + other herbs of choice –> I prefer fresh cilantro! ;)
